Food Safety Guideline: Egg Products

The Household & Commercial Products Association (HCPA), representing companies that manufacture cleaning and antimicrobial products, supports the revised Food Safety Guideline for Egg Products. They recommend that the FSIS clarify how establishments can demonstrate sanitation effectiveness through validated process controls, emphasize performance-based outcomes, acknowledge cross-agency coordination with the EPA and FDA, and include practical examples for implementation.

The United Egg Association (UEA) supports the revised Food Safety Guideline for Egg Products, noting that it is accurate and consistent with industry practices. They request clarification on whether the high operating temperatures of spray dryers can serve as "additional support" for sanitation compliance and suggest clarifying that the guideline does not create new regulatory requirements.
