Until recently, I enjoyed remarkable health and maintained a gluten-free diet with very limited processed foods. My decline did not come from a dramatic change in eating habits, but from small, cumulative compromises driven by daily realities. As the primary support for my two adult children, who require special attention due to their health disabilities, our household increasingly relied on fast and ultra-processed foods. Even though I personally consumed only minimal amounts—such as occasionally sharing portions of their French fries—the constant exposure and lack of healthier, convenient alternatives had a profound impact. In less than a year, I gained 31 pounds, developed diabetes, and reached the highest cholesterol and triglyceride levels of my life. I have also watched my children’s health suffer, likely influenced by a sedentary lifestyle and the dominance of processed foods. My experience underscores how even informed, health-conscious families can be harmed by an environment that prioritizes convenience and profit over public health, highlighting the urgent need for stronger government regulation and oversight.
